Red Pepper Pasta Bowl

Serves 4.

RECIPE

  • 8 oz. dry pasta*
  • 1 Tbsp. Joe’s Original Garlic Sauce
  • 1 lb. (16 oz.) chicken breast, diced
  • 1 red bell pepper, diced
  • 6 Tbsp. Joe’s Roasted Red Pepper & Walnut Spread
  • 1/2 cup grated Parmesan cheese**

Cook pasta according to package. Drain and set aside. In separate pan, heat Joe’s Garlic Sauce then add chicken and cook until no longer pink. Add diced red pepper to chicken and sauté 3-4 min. Add chicken mixture, Joe’s Roasted Red Pepper & Walnut Spread and Parmesan cheese to pasta and gently mix until coated. Serve immediately.

*We love Tri-colored Rotini in this dish, but any bite-sized pasta will work.
**Shredded works OK, but grated is best. You can also try Feta cheese for a sharper flavor.

Note: If mixture is too watery from not draining pasta or chicken well enough, you can soak up extra liquid by adding in 1/4 to 1/2 cup of plain breadcrumbs.
